1 pkg. ramen noodles with seasoning
1 broccoli floret, chopped into bite-sized pieces
3 green onions, finely sliced
1 jalapeño pepper, seeded, cored, and thinly sliced
½ c. sliced almonds
1 lime, juiced
¼ c. rice wine vinegar
1 T. sesame oil
1 T. fish sauce
1 tsp. sugar or agave sweetener
In a large bowl, combine coleslaw, broccoli bits, green onion, jalapeño, and almonds. Remove uncooked ramen noodles from packaging and break into small pieces into the bowl. Toss well.
Gradually work in the liquids, including the lime juice, vinegar, sesame oil, and fish sauce, tossing often to coat evenly. Add the seasoning packet from the ramen noodles and the sweetener. You guessed it – toss again.
This slaw presents well as a side dish for any barbeque. But perhaps the best way to appreciate it is underneath a nicely cooked, miso or teriyaki-glazed piece of fish, such as salmon or cod.
