There's no real method to the madness, because you should use any amount of these ingredients that you enjoy. Prepare it "to taste" by tasting often. Here's what I did.
4 kirby cucumbers, halved and sliced
1 can hearts of palm pieces
1 handful pitted olives, chopped
2 roasted artichoke hearts, chopped (I rely on Fairway's olive bar for these, as well as the olives. They're coated in some olive oil, too, which gives the salad all of the oil it really needs)
¼ cup feta cheese, crumbled
2 scallions, minced
1 handful dill, chopped
1 handful parsley, chopped
½ large lemon, juiced
1 T. red wine vinegar
Slice. Chop. Mince. Crumble. Juice. Mix well.
Imagine Greek Isles. Or a lounge chair at the Jersey Shore. Whatever. Just enjoy.
